These mini eggplant pizzas are perfect for when I'm craving pizza but want a healthier version. I went simple with toppings (just fresh basil) but you could easily add pepperoni, sausage, mushrooms, onion, etc.
Ingredients
1 ripe eggplant, cut into slices 1/4 - 1/2 inch wide
pizza sauce
shredded mozzarella cheese
any toppings you prefer on pizza

Preheat oven to 450 degrees. Pat eggplant slices dry with paper towel and place on a parchment paper lined baking sheet in a single layer.
