Looking Back at 2023

My word for 2023 was growth, and looking back at the year, it truly fit. I experienced growth in my marriage, in motherhood, in my friendships, in myself & my health journey, and in my business at work. I also saw growth in my blog this year with the most posts I have published since 2016!

Overall it was an amazing year filled with so many unforgettable memories with the ones I love, and although many of those moments were not captured in a photo, I'm sharing some of my favorites from my camera roll this year.

Cookie Cutter Protein Pancakes

Our Christmas Eve breakfast consisted of protein pancakes in holiday shapes, dipped in my mom's family's pure Vermont maple syrup of course :)

ingredients
1 cup of GF oats
1 ripe banana
1/2 cup almond milk
1 scoop vanilla protein powder
1 egg
1/2 teaspoon baking powder

directions

Preheat griddle to 350 degrees.

In a blender, combine all ingredients.

Spray cookie cutters (use any shapes!) with non-stick spray. Carefully place on hot griddle.

Fill each cookie cutter 1/3 full with pancake batter. When golden brown, use tongs to flip, and gently remove the cookie cutter, and brown the other side.

Serve warm with any toppings you love with pancakes - maple syrup, berries, powdered sugar, etc.

Banana Bread - Two Ways


As many times as I've baked banana bread, I have never used the same recipe twice. It tends to be a last-minute decision to bake banana bread when we have freckled bananas, and I look for a recipe that has ingredients I have on hand at the time. I've tried many iterations of mix-ins over the years - chocolate chips, blueberries, and in the form of muffins.

In the last month, I've made two different versions of banana bread - one with cinnamon and pecans, and another with peanut butter chips (my personal fave!). Both were delicious, especially when served warm with a swipe of butter and paired with a cup of coffee. Both recipes are below - which one would you try?



Cinnamon Pecan Banana Bread

ingredients
2 cups flour (I use gluten free 1-for-1)
1 1/2 teaspoon baking soda
1/2 teaspoon salt
4 overripe bananas
1/2 cup sugar
1/2 cup brown sugar
3/4 cup butter (1.5 sticks), melted and cooled
2 large eggs
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 cup chopped pecans

Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan.

In a large bowl, combine the flour, baking soda and salt. Set aside.

In a separate bowl, mash 2 of the bananas with a fork leaving a bit of texture. Sprinkle generously with cinnamon.

With an electric stand mixer, combine the remaining 2 bananas, sugar and brown sugar. mix for at least 3 minutes until the mixture becomes a light fluffy cream.

Add melted butter, eggs and vanilla to the banana cream mixture. Beat well and scrape down the side of the bowl as needed.

Fold in the dry ingredients until just combined (don't overmix!). Add in the mashed banana with cinnamon, and 90% of the nuts - keep a small handful left out to sprinkle the on top of the bread.

Pour batter into the greased loaf pan. Top with a few pecans.

Bake for 1 hour and 15 minutes until the bread is golden brown, rotating the pant half way through to ensure it bakes evenly. Insert a toothpick into the middle of the bread - if it comes out clean, it's ready!

Let bread cool for at least 10 minutes before removing from pan, slicing and enjoying! Store the remaining in an airtight container.




Banana Bread with Peanut Butter Chips

*you could easily substitute with chocolate chips but if you know me, you know I LOVE peanut butter :)

ingredients
1/2 cup (1 stick) of butter, softened
1/2 cup granulated sugar
2 medium overripe bananas, mashed
2 large eggs
7 tablespoons of almond milk
1 teaspoon vanilla
2 cups flour (I use GF)
1/4 teaspoon of salt
1 teaspoon baking soda
1-1/2 cups Reese's peanut butter chips, divided

Preheat oven to 350 degrees. Spray a 9x5 baking dish with non-stick cooking spray.

In a stand mixer, cream together the butter and sugar.

In a separate bowl, mix the mashed bananas, eggs, almond milk and vanilla.

Add the banana mixture to the stand mixer with the butter and sugar.
{5}
In another bowl, combine the flour, baking soda and salt.

Slowly add the flour to the stand mixer until just combined - do not overmix.

Using a wooden spoon or spatula, stir in 1 cup of the peanut butter chips.

Pour batter into greased loaf pan. Sprinkle with remaining 1/2 cup of peanut butter chips.

Bake for 60-75 minutes until a toothpick comes out mostly clean. Let bread cool for at least 10 minutes before removing from pan. Enjoy!

Dear Jack - Part 5

How are you FIVE already?! I feel like you were just placed on my chest in the hospital, and simultaneously, I can't remember life without you in it.

Everything is way more fun with you - you make me laugh harder than anyone I've ever met. You give the best hugs in the world. You love to snuggle and still like to hold my hand when we walk into school. You are extremely witty and charismatic. You still love trucks of all kinds - monster trucks, fire trucks, garbage trucks, construction trucks. You have an amazing memory, recalling places and experiences from years ago, and can recite a book after Dad and I read it to you just a handful of times. You feel like a mini adult the way you talk and express your opinions. You speak so genuinely, especially with compliments or showing your love.

You are the first blood relative I have ever met since I was adopted, and seeing my physical features and personality traits in you is extra emotional. Dad often jokes that there are two of us since we are so much alike. 

The transition from your three-sided crib to a big boy bed happened earlier this year, and now you have a queen size bed with enough room for me to have sleepovers with you once in a while. You started VPK this year, and continue to learn and grow each month. We have entered the age of play-dates and seeing you form friendships with classmates and neighbors has been so special.

Some things I never want to forget about this age, including a couple "Jackisms" I have written down in your Jack Journal:

Instead of "literally" you say "litery" and I am never going to correct you because it's my new favorite word.

You love an outfit - even to go swimming in the pool, you always want to wear a sun shirt with your swim trunks.

One night when we were snuggling before bedtime, I gave you a big hug and kiss and you said, "now we're married!" It was so cute that you associated love with being married.
