Our Christmas Eve breakfast consisted of protein pancakes in holiday shapes, dipped in my mom's family's pure Vermont maple syrup of course :)
ingredients
1 cup of GF oats
1 cup of GF oats
1 ripe banana
1/2 cup almond milk
1 scoop vanilla protein powder
1 egg
1/2 teaspoon baking powder

Preheat griddle to 350 degrees.

In a blender, combine all ingredients.

Spray cookie cutters (use any shapes!) with non-stick spray. Carefully place on hot griddle.

Fill each cookie cutter 1/3 full with pancake batter. When golden brown, use tongs to flip, and gently remove the cookie cutter, and brown the other side.

Serve warm with any toppings you love with pancakes - maple syrup, berries, powdered sugar, etc.
